Turkey Burger with Kale and Mushrooms

What do you need:

  • 8 hamburger buns, preferably wheat

  • 1/2 kilogram of ground turkey

  • 4 baby bella mushrooms

  • 2 cups fresh kale

  • 1/4 cup diced sweet onion

  • 2 tablespoons olive oil

  • 1 tablespoon finely chopped fresh oregano leaves

  • 1 tablespoon chimichurri sauce

  • 1/4 teaspoon minced garlic

  • 1/4 teaspoon of salt

  • Avocado slices, for serving

Heat the olive oil in a skillet over medium-high heat and sauté the onion and garlic until tender. Add the mushrooms and kale, then cover and cook until the veggies are tender. Let cool. When ready, combine the kale and mushroom mixture with ground turkey and season with oregano, chimichurri, and salt. With clean hands, form patties. Cook on a preheated grill over medium-high heat, turning once, to desired doneness. Top the buns with the sauce of your choice and then top with turkey patty and avocado slices.

Grilled peaches with honey yogurt

What do you need:

  • 3 peaches, halved and pitted

  • 2 cups of plain Greek yogurt

  • 1/4 cup of honey

  • Cinnamon powder

Mix the Greek yogurt and honey in a small bowl. Set aside. Cook peaches on a preheated grill over medium heat, cut side down, until grill marks appear. When done, top the roasted peaches with honey and yogurt. Sprinkle with ground cinnamon before serving.

Roast Beef and Sweet Potato Wraps

What do you need:

  • 6 whole wheat tortillas

  • 1/2 kilo of sirloin steaks, thinly sliced

  • 6 cups diced sweet potato, steamed

  • 3 cups thinly sliced ​​cabbage

  • 1 cup of white onion thinly sliced

  • 1 cup fresh basil thinly sliced

  • 3 tablespoons lime juice

  • 3 tablespoons low sodium soy sauce

  • 2 tablespoons canola oil

  • 1 1/2 teaspoons garlic hot sauce

  • 1 teaspoon of brown sugar

Cook meat on a preheated grill over medium high heat until fully cooked (slightly pink in the center), about 2 to 3 minutes per side. To make the dressing, combine the lemon juice, soy sauce, canola oil, chili sauce, and brown sugar in a glass jar and shake to combine the ingredients well. Place the cabbage and onion in a bowl and toss with half the dressing. Arrange grilled meat, sweet potatoes, and cole slaw on a serving platter. Drizzle the meat and sweet potatoes with the remaining dressing. Serve with tortillas.
