Three traditional Australian recipes

For a long time, Australian food bore a strong resemblance to British food, largely due to the fact that most of the Australian settlers were of British origin. However, over time, Australian cuisine has acquired its own unique fusion of Mediterranean, British and Asian flavours. This article features three of my favorite Aussie recipes that I’m sure you’ll enjoy!

sausage rolls

Ingredients:

6 slices of bread

1/2 cup of hot water

4 pounds ground sausage meat

1 onion (finely chopped)

1/2 teaspoon mixed herbs

24-ounce package ready-made puff pastry (thawed)

1 egg (beaten)

Desired seasonings to taste

Addresses:

Remove the crust from the bread and soak the bread in hot water for about 5 minutes. Remove excess water from bread. In a large bowl, combine sausage meat, bread, onion, desired seasonings, and mixed herbs. Mix well, then pipe the mixture into a piping bag (or a freezer bag with one corner cut off). Roll out the sheets of dough and cut them in half. Pipe the filling along one edge of each dough sheet. Roll the dough over the sausage twice (or until the sausage is completely covered with the dough). Make a few cuts in the upper part of each puff pastry and brush them with a beaten egg. Move the sausage rolls to a baking sheet and bake at 450 degrees F for about 20 minutes, then reduce the heat to 350 degrees F for an additional 10 to 15 minutes.

meatloaf

Ingredients:

1.5 pounds ground beef

2 beef bouillon cubes

1 1/2 cups water + an additional 1/4 cup

2 tablespoons all-purpose flour

1 teaspoon soy sauce

salt and pepper to taste

A pinch of nutmeg

1 deep dish pie crust

(cake icing)

12 ounces puff pastry

1 egg yolk

1 teaspoon of water

Addresses:

Brown the meat in a pan over low heat until well cooked. Drain any remaining fat. Crumble beef cubes and add along with 1 1/2 cups of water, pepper, salt, and nutmeg. Allow the mixture to boil, then reduce the heat. Cover, then simmer for about 20 minutes, stirring occasionally. Combine 1/4 cup of water with 2 tablespoons of flour and mix well. Add this to the meat, then stir until well combined. Return the meat to the heat and stir until the mixture thickens. Add soy sauce and stir well. Simmer (uncovered) for about 5 to 10 minutes, then remove from heat and allow to cool before pouring into the tart crust. Roll out the puff pastry on a floured surface and cut to fit over the tart. Whisk together the egg yolk and water and brush the top of the pie, then bake at 400 degrees F for about 5 minutes, or until the pie crust is golden brown. Reduce to 350 degrees F and cook for an additional 10 minutes.

Anzac Biscuits (Biscuits)

Ingredients:

1 cup quick cooking oats

3/4 cup shredded coconut

1 cup all-purpose flour

1 teaspoon of baking soda

1 cup of white sugar

1/2 cup butter

1 tablespoon golden syrup

2 tablespoons of boiling water

Addresses:

Mix oats, sugar, coconut and flour. In a small saucepan, melt the syrup and butter over low heat. Add the baking soda and boiling water to the butter and syrup mixture and stir well. Add the butter mixture to the dry ingredients and mix well. Scoop onto greased cookie sheets and bake at 350 degrees F for about 20 minutes.
