Try These Delicious Grilled Recipes Perfect For Winter

Congratulations, you’ve decided to brave the cold elements and still put your grill to good use! Winter is a great time to enjoy delicious freshly grilled dishes. Holidays or not, these delicious winter grill recipes are sure to make you forget how cold it is!

Grilled Tomato Soup

What do you need:

  • 6 large tomatoes, quartered
  • 3 cups chicken or vegetable broth
  • 1 cup basil, finely chopped
  • 1/2 cup shredded Cheddar Jack cheese
  • 6 tablespoons olive oil, divided
  • 2 tablespoons crushed shallot
  • 1 tablespoon crushed garlic
  • Salt and ground black pepper to taste
  • French bread (optional)

Place the tomatoes in a bowl. Add 2 tablespoons of olive oil and season with salt and pepper. Toss to coat. Place on grill pan and cook on a preheated grill over medium heat until browned, about 5 minutes per side. Cool for a few minutes, then puree in a blender. Set aside.

Heat 2 tablespoons of olive oil in a saucepan and cook the shallot and garlic until they begin to caramelize, about 3 minutes. Add the roasted tomato puree and basil to the pot and cook for an additional 3 minutes. Reduce the heat and pour in the chicken broth. Simmer for 30 minutes, uncovered.

While you wait for the soup to cook, cut the French bread into 1-inch cubes and add the remaining olive oil. Place in a baking dish and toast in the oven.

When the soup is ready, portion it into bowls. Top each bowl with croutons and sprinkle with Cheddar Jack cheese.

Grilled Cinnamon Coated Apple Bites

What do you need:

  • 2 large apples, cored and cut into 1/4-inch-thick pieces, skin on
  • 1/2 cup of purified water
  • 1/4 cup freshly squeezed lemon juice
  • 2 tablespoons of brown sugar
  • 1 teaspoon cinnamon
  • pinch of salt

In a large bowl, mix the water and lemon juice. Add the apple slices to the bowl (this will help prevent the apples from browning while in the cold winter air). In a separate bowl, combine brown sugar, cinnamon, and salt. Set aside.

Place the soaked apples on a wire rack and cook on a preheated grill over medium heat for 6 to 8 minutes per side, turning once. When ready, place the baked apples on a serving plate and sprinkle with the brown sugar-cinnamon mixture. It is best served hot with a scoop of vanilla ice cream.
